Choco zucchini brownie

Brownie met courgette

12 pieces


  • 250 g dates 
  • 100 g coconut flour
  • 75 g raw cacao powder
  • 1 small zucchini
  • 2 eggs
  • 200 g organic butter or coconut oil
  • 125 g walnuts


  1. Soak the dates for at least 12 hours in water. Rinse them using a strainer.
  2. Preheat the oven to 180 degrees.
  3. Melt the butter/coconut oil in a small pan.
  4. Whisk the eggs in a bowl.
  5. Cut the zucchini in 4 pieces and blend with 50 ml water. 
  6. Add zucchini, coconut flour and raw cacao powder to the bowl.
  7. Add in the melted butter/oil at last. 
  8. Blend the dates, chop the walnuts and mix with the rest.
  9. Line a baking pan with parchment paper. 
  10. Bake in the center of a preheated oven for 30 minutes until firm.
  11. Let cool for 15 minutes before cutting in pieces
