Choco zucchini muffins

Choco courgette muffins

12 muffins

Ingredients:

  • 400 g oatmeal
  • 4 tbsp coconut sugar
  • 6 tbsp raw cacao powder
  • 3 eggs
  • 300 ml water
  • 100 g butter
  • Honey
  • 1 teaspoon vanilla extract
  • 500 g zucchini
  • 125 g walnuts

Preparation:

  1. Preheat oven on 200 degrees.
  2. Mix oatmeal, coconut palm sugar and raw cacao in a bowl.
  3. Use a separate bowl to whisk the eggs.
  4. Dissolve butter in 250 ml boiled water.
  5. Combine eggs, butter, honey and vanilla extract with oatmeal.
  6. Grind the zucchini with 50 ml water in the blender.
  7. Mix the zucchini using a spatula with the rest.
  8. Chop the walnuts and add to mixture.
  9. Fill up 12 silicon muffin cups with the mixture.
  10. Bake the muffins for 20 minutes in preheated oven.
  11. Allow to cool about 10 minutes in muffin cups, and then transfer to a baking rack to cool completely.
