Kimchi salad

Kimchi salad

This salad contains fermented vegetables that nourish the good gut bacteria. The fresh and sour taste of this salad stimulates the taste buds and it is easy to prepare.


  • 200 g of lettuce, chopped
  • 1 avocado
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp olive oil extra vierge
  • 2 tbsp vegan kimchi
  • 225 g chickpeas
  • hand full cherry tomatoes
  • 4 tbsp toasted pumpkin seeds
  • 1 tbsp black sesame seeds


  1. Place the chopped lettuce into a large mixing bowl.
  2. Add the avocado, lemon juice, and olive oil.
  3. Rinse and chop tomatoes in halves.
  4.  Add the kimchi, chickpeas, tomatoes and seeds.
  5. Season to taste with sea salt, and enjoy!
