Raspberry Brownies

Raspberry Brownies

A healthy brownie with no added sugar, just raspberries that's it. Cacao is rich in antioxidants and endorphins. These brownies make you happy!

Start to Finish: 20 minutes

Ingredients:

  • 2 large eggs
  • 1 cup almond flour
  • 50 g cacao powder
  • 100 g melted grass-fed butter or ghee
  • 1 teaspoon baking powder
  • 2 teaspoon apple cider vinegar
  • 2 teaspoons vanilla
  • 2 teaspoons Ceylon cinnamon
  • 3 tbs cacao nibs
  • 80 g frozen raspberries
  • Shredded coconut to sprinkle on top

Instructions:

  1. Preheat your oven to 340 degrees. Line a bread loaf tin with parchment paper.
  2. Whisk the eggs in a large bowl.
  3. Add all the ingredients (except for the raspberries and shredded coconut) into a large bowl and mix to combine.
  4. Scoop the mixture in the pre-lined tin and spread it out evenly.
  5. Press the frozen raspberries into the top of the batter evenly.
  6. Bake the brownie for 15 minutes.
  7. Remove from the oven and allow to cool for 15 minutes before slicing.
  8. Sprinkle a shredded coconut over the top.
