Red beet salad

Beetroots are rich in vitamins and minerals which taste great combined with apple cider vinegar, fresh mint, nuts and coriander. The perfect salad for a picknick.

Ingredients

  • 4 Red beets, pre cooked
  • 1 Red onion, cut in half and thinly sliced
  • 1 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 2 tsp Cumin
  • 1 tsp Sea salt
  • hand full Fresh mint leaves
  • hand full cilantro leaves
  • hand full walnuts or pecan nuts

Preparation:

  1. Cut beets into small cubes and set aside. 
  2. In a small bowl combine vinegar, olive oil, cumin and sea salt. Stir well and set aside.
  3. In a large bowl add in beets, fresh mint, fresh cilantro, sliced onions and dressing and toss until everything is mixed together. 
  4. Top with more fresh herbs and nuts.
