Seamorefood contacted Tessa to test their newest product: seaweed pasta. You might feel funny when you try this for the first time, but with the right ingredients you can make the most healthy pasta... ready in just a few minutes! Ingredients:

  • 100 g sea weed pasta – I Sea Pasta
  • 80 g goat’s feta (le President)
  • 100 g toasted almonds
  • 100 g rucola
  • 50 ml olive oil
  • ½ fennel
  • 120 g pomegranate seeds

Preparation:

  1. Soak sea weed pasta for 40 minutes in cold water. Rinse well. 
  2. Combine goat’s feta, almonds, olive oil and half of the rucola in the blender.  Pulse till equal mixture exists. 
  3. Add a bit more olive oil to create the perfect pesto. 
  4. Slice fennel (thin slices).
  5. Combine sea weed pasta, with the left over rucola, fennel and pomegranate seeds. 
  6. Drizzle pesto on top.
