Spring salad

This recipe is created by Ietje and Maurits from No rapid sugars that skyrocket your blood sugar levels. The sweet taste comes from sweet potatoe and figs.

Ingredients for 2 servings:

  • Head of green lettuce
  • 150 g sweet potato
  • 50 g soft goat cheese
  • 4 tablespoons pine seeds
  • Two fresh figs
  • Olive oil extra virgin
  • Sea salt
  • Ground pepper


  1. Rinse sweet potatoes. Cut in little cubes and cook with a pinch of sea salt for 15 minutes. Check with a fork if the potatoes feel soft, then they are ready. 
  2. Preheat a pan on medium fire. Roast the pine seeds until brown. Keep aside on a plate. 
  3. Rinse the lettuce and divide over two bowls. Sprinkle with olive oil. 
  4. Wipe the fresh figs gently, and cut them in half. Add sweet potato, goat cheese, pine nuts and figs.
  5. Add sea salt and ground pepper to taste.
