Choco zucchini brownie

12 pieces
Ingredients:
- 250 g datesÂ
- 100 g coconut flour
- 75 g raw cacao powder
- 1 small zucchini
- 2 eggs
- 200 g organic butter or coconut oil
- 125 g walnuts
Preparation:
- Soak the dates for at least 12 hours in water. Rinse them using a strainer.
- Preheat the oven to 180 degrees.
- Melt the butter/coconut oil in a small pan.
- Whisk the eggs in a bowl.
- Cut the zucchini in 4 pieces and blend with 50 ml water.Â
- Add zucchini, coconut flour and raw cacao powder to the bowl.
- Add in the melted butter/oil at last.Â
- Blend the dates, chop the walnuts and mix with the rest.
- Line a baking pan with parchment paper.Â
- Bake in the center of a preheated oven for 30 minutes until firm.
- Let cool for 15 minutes before cutting in pieces
