Green asparagus and eggs

Groene asperges met ei en zalm

2 portions


  • 4 organic eggs 
  • 1 small bunch parsley 
  • 2 spring onions, finely sliced
  • Sea salt and pepper to taste
  • 2 bunches asparagus, trimmed


  • 1 tbsp apple cider vinegar
  • 1 teaspoon mustard
  • 4 tbsp olive oil extra virgin


  1. Chop the hard boiled eggs. 
  2. Place the eggs into a bowl and combine with spring onion, salt, pepper and parsley.
  3. Combine the apple cider vinegar with the mustard and olive oil until smooth and emulsified in a separate bowl.
  4. Spoon dressing into the smashed eggs. 
  5. Blanch or steam asparagus for 30 seconds.
  6. Arrange asparagus onto a serving plate.
  7. Spoon over the smashed eggs.
  8. Serve with dressing.
